Women have been cooking with herbs since the first century. Spices, in fact, have been in the kitchen even longer. Did you know that reference to them has been found in 4,800-year-old Egyptian papyri?
However, as we all know, time brings new ideas and easier methods of doing most things. Over the years, we determined that sprinkling a little salt on a dish or placing a slab of fat in the soup pot was easier than growing, gathering, and using the time tested herbs. Easier is not always better.
Fat and salt: What good is fast food if your immune system is sluggish? When your immune system is down, your body cannot defend itself against virus and disease. Sickness finds a home in your body.
Take heart! Simply delicious, healthy recipes are mushrooming! The masses are realizing the benefits of herbs and spices in place of salt and fat. Not only do they give your food a better flavor, but they also add enormous health benefits without much effort.
Rather than adding tons of salt and fat, load your food choices with onions, garlic, peppers, ginger, parsley, clover, bay, rosemary, turmeric and cumin. Herbs and spices are commonplace in today’s markets, so you can use them in your daily meal planning. You’ll not only have the most scrumptious meals in town, but you’ll cut your salt and fat intake by more than half while feeling terrific!
Try this yummy March dish.
Fish Stew with Calvados, Parsley and Dill
~~~ Most any variety of fish is workable.~~~
Serves 4
1 tbsp chopped parsley
8 oz mushrooms
8 oz can tomatoes
salt and pepper to taste
2 tsp arrowroot
1 tbsp real butter
1-1/2 cups cider
3 tbsp Calvados
1 large bunch fresh Dill springs*

*Reserve 4 fronds for garnish

1) chop the fish roughly and place it in a casserole or stewing pot with the parsley, mushrooms, tomatoes, and salt and pepper.
2) Pre-heat the oven to 350° (400° gas).
Work the arrowroot into the butter heat, the cider, and stir all into the flour mixture a little at time. Stir while cooking, until it thickens slightly.
3) Add the cider mixture and the remaining ingredients to the fish and mix gently.
Cover and bake for about 30 min.
Garnish with springs of dill and parsley.

Hawthorn Tea
Strengthens heart muscles, promotes blood flow and lowers blood pressure. Hawthorn leaves and flowers can be purchased at any good health food and herbal shop.
To make tea, use 1 tsp per cup of boil water.
